As you will learn if you visit this site regularly, we love cheese here in the Robinson house. While I know it’s not always the healthiest addition to a meal, sometimes, there’s just no way around it. Especially when you’ve got hungry and possibly cranky (and picky) kids needing to eat.And that is certainly the case with this super easy-to-make, Perfect Grilled Cheese Sandwich recipe.

I know what you’re probably thinking – Post #2 and this Real Food by Dad guy professes to have created the perfect grilled cheese sandwich? Actually, I don’t blame you for thinking that. However, this statement comes from my wife and sons. And to them, it has everything to do with the addition of roasted red pepper sauce as well as the pesto. These give the sandwich the little kick that is needed to turn a boring grilled cheese sandwich into something that’s a huge hit and future regular and easy-to-make meal for the family. And while I know grilled cheese sandwiches have gotten crazy fancy and overly creative nowadays (and expensive at many restaurants), this one is an awesome, stepped-up version for under a dollar each. Perfect for a quick and yummy lunch for the kids!

While the red pepper sauce and pesto get all the credit, I think it’s also due to two other ingredients: thechoice of cheese – Provolone, which gives the sandwich a full-flavored taste, as opposed to the traditional use of cheddar cheese. And also, the use of mayonnaise on the outside of each side of the sandwich, which allows it to cook faster and brown evenly.

Optionally, you can also sprinkle Parmesan cheese on both sides prior to grilling for added flavor.

Ingredients

  • 2 slices bread
  • 2 teaspoons pesto
  • 2 teaspoons roasted red pepper spread
  • 1 slice provolone
  • 1 tablespoon mayonnaise

Instructions

  1. 1. Heat skillet over medium heat. Spread pesto on the inside of one bread slice and red pepper sauce on another. Place cheese in between two slices. Spread mayonnaise on the outside of both slices of bread.2. Place assembled sandwich in pan and cook until golden brown, about 3-5 minutes.*Optionally: Sprinkle and press grated parmesan onto mayonnaise spread for added flavor and crunch.
